A five-month investigation into learning bread through making and photography, where repetition gradually transformed an ordinary subject into a study of material, structure, variation and time.

Manu’s Artisan Breads began as a five-month attempt to learn artisan bread from the ground up. Loaf after loaf was mixed, fermented, baked, photographed, examined and reconsidered as I worked through different flours, fermentation methods and techniques.

Photography initially entered the process as a way of recording what I was making. Over time, however, it became part of the investigation itself. The repeated act of photographing bread began to reveal things that were easy to overlook in an object so familiar: ruptured surfaces, internal structures, differences in crumb and crust, traces of fermentation, and the small variations produced by time, temperature, flour and handling.

Repetition became increasingly important. Rather than searching for a single ideal loaf or image, I became interested in what accumulated observation could reveal. Similar forms appeared again and again, but never quite repeated themselves. Each loaf became both an object and a record of a particular set of conditions.

As my understanding of bread developed, the work gradually shifted from improvement toward intention. I began thinking less about whether a loaf was simply successful and more about what qualities I wanted it to express — through grain, structure, fermentation, surface and form.

The investigation eventually became Manu’s Artisan Breads — Studies in Flour, Water & Time, a 170-page book containing 290 original photographs alongside writing, working formulas and process studies. Five preliminary copies were privately printed in 2026 as physical proofs of the completed work. It has not been commercially published.

What began as an attempt to learn how to make bread ultimately became an investigation into learning through making — and into what sustained photographic attention can reveal about an ordinary material as it changes through repetition, observation and time.
